The Best Beef in the World is in Argentina

Argentina is know for its incredible sights, its cosmopolitan capital, its beautiful people, and most definitely for its amazing beef. The beef in Argentina is without question the best in the world, and Argentines show their pride in this by producing some of the best Parilleros (grill-masters) in the world. If you travel to Argentina and you're not a vegetarian, you're in for a treat, it's called an Asado, and it's Argentine version of a BBQ.


But let me start by dispelling the preconceptions that the word "barbeque" might entail. You will not find hot dogs, or corn on the cob at an Argentine asado, and you will most certainly not find any hamburgers. The only beef that touches the grill at an Asado is in the form of delicious, absurdly large steaks.


Another important thing to note about Argentine beef is that the cuts of beef are completely different. There really aren't any "steaks" in Argentine cuts. The beef is kept in more natural pieces (read: large). Furthermore, except for ribs (tira de asado), few Argentine cuts have any bone in them. They do however have more fat, as this is what keeps the beef moist during grilling, and gives it flavor. To order the most common cuts, opt for a Bife de Chorizo (huge and juicy), a Bife de Lomo (lean and tender), or a Tira de Asado (ribs).


Finally, I'm going to share a few of the Argentine grilling secrets. They're deceptively simple. First of all, they start with the best beef. Argentine cows are pasture fed, allowed to roam, and not injected with anything, making the beef much more natural and healthy. Secondly, they let the natural taste of the beef do the work. Argentines don't season their beef. Really. All they put on it before throwing it on the grill is thick-grained salt. Lastly, they don't overcook it. To keep the beef tender and juicy, it has to be a little pink in the middle. Never ask for "well-done" in Argentina, it's almost an insult.


So next time you travel to Argentina, make sure you go to a Parilla. Or eight of them. Once you get a taste of Argentine beef, I'm sure you will want more.
